Production of ingredients and food that contribute to preventing diseases that are prevalent in society, such as strokes; which may lead to neurodegenerative diseases such as cognitive impairment or dementia, hence contributing to improving the quality of life and health of consumers.
This project is aimed at obtaining neuroprotective ingredients based on raw materials from the agri-food sector for the development of foods and food supplements.
All of this is focused on the following results:
- Raw materials from the agri-food industry that may be sources of phytochemicals and other compounds with potential neuroprotective activity.
- Natural neuroprotective ingredients obtained through innovative and sustainable technologies.
- New techniques for sustainable agricultural management to naturally increase the composition of phytochemicals with neuroprotective potential in selected raw materials.
- Validation of the neuroprotective activity of the ingredients developed through clinical trials on patients at risk of a stroke.
